3 cups rolled oats
(we use gluten free of course)2 cups of liquid
(hemp milk is my favorite, but orange juice adds a nice flavor)
2 T raw apple cider vinegar
1/4 cup
rapadura or other natural sweetener
1/2 cup coconut oil
2 eggs or equivalent in egg replacer *
1 tsp vanila
2 tsp baking powder
1/2 tsp salt
Mix oats, liquid and apple cider vinegar and let sit overnight on counter. Next morning, preheat oven to 350F. Grease an 8x8 oven pan. Add remaining ingredients to oat mix, pour in oven dish and bake for 30-45 min.
Variations: add raisins or apple and cinnamon or coconut flakes. I have even made this with chocolate chips
